i've recently started a new job, so it's been hard to find time to get stuff up on the blog. however, one of the perks to the new job is tele-working a few days a week. so i took advantage of my lunch hour yesterday and threw this together.
now, i rarely make sweets since i don't really eat them, however there were 4 lonely apples staring at me in the fridge and i just knew i had to do something about it.
here's what i did.
(i apologize if the recipe is a little sloppy...i threw this together very fast!)
layered puff pastry w/
caramel drizzle and toasted pecans
filling
3
large apples – peeled and sliced thin
1
tbsp cinnamon
¼ tsp
nutmeg
½ cup brown sugar
2 tbsp earth balance
pinch
of salt
topping
3
sheets puff pastry (you can find these at your grocery store)
5
tbsp earth balance (reserve 1 tbsp for brushing sheets)
1
cup brown sugar
¼ cup
non dairy creamer
1
drop vanilla extract
½ cup chopped pecans – toasted
serve
with coffee.
No matter how often I see these galtetes, I want a piece. Just looks so darn yummy! Good thing you don't get calories just from looking and coveting.

Uh, a group or sect that acts weird, that is one definition of a cult, the Vegancult is right at home there. And guess what, being a mmeebr of the Vegancult is going to do NOTHING about 3rd world poverty, a very complexd problem that needs many cures. If you do not want to make animals suffer, just eat chicken, they have brains the size of a piece of gravel they don't mind getting gobbled down. Vegans are over six times more likely than nonvegans to have brain atrophy.

If it's for a kid, how about ants on a log? If you're worried about peuant allergies, you can always try almond butter.For a dip, you can use hummus or any kind of salsa. That should work for the chips and the veggies.The only soy-free vegan cheese I know of is Daiya, and I'm pretty sure most conventional grocery stores don't carry it, although some Whole Foods might.

Oh my god. That looks amazing! Where do you get your vegan puff pastry in the TC area? I've looked and not found it, but apparently not in the right spot!
