just a new, healthier twist on an old favorite...feel free to jazz it up however you see fit!
spanish style quinoa
1-cup
quinoa

cups broth (of your choice)

cloves garlic – minced
1
small Vidalia onion – diced
1 green pepper - chopped
1 red pepper – chopped
1
small can medium tomato/onion salsa
1
15oz. crushed tomatoes
1 small
can of green chilies
½
tsp cayenne
½
tsp crushed red pepper
1
tsp cumin
1
tsp chili powder
½
tsp salt
½
tsp black pepper
1
tbsp olive oil
½
cup fresh chopped tomatoes
¾
cup fresh cilantro – chopped
combine the quinoa with all ingredients;
heat through another 5-7 minutes, and transfer to serving bowl.

I love these little recepis, they're great! I can read all the way through without feeling desperate and angry. Complexity will be fine when I get in the groove and the simple things become second nature, but right now the simple things is what I gotta learn, and having them presented in such a readable format is bliss.What would be really helpful is a listing of 3-ingredient flavorings that will give a certain character to the quinoa, and then for each of those a short list of main ingredients that play nice with a given flavoring. I may be asking too much, but I guess when I was a little kid I asked for 3 cookies and got 1 cookie, and it kinda stuck.Anyway, you've given me hope that there is help for me out here in the wilderness, and I thank you very much for that

Wow, that looks great. I would love to try this right now, but I'm fresh out of Quinoa. I must get more soon and try this!
